Remember corn nuts? Sure you do. Who could forget those salty, crunchy, and strangely addictive snacks. Well, here is a grown-up, healthy version that you don't have to feel guilty eating. One warning - these are so good that you may eat them all in one sitting.
Roasted Garbanzos
Ø 1 15-oz can of garbanzo beans (chickpeas)
Ø 1 large lemon wedge
Ø olive oil spray
Ø garlic salt
Ø pepper
Line a large flat pan or cookie sheet with tin foil and spray with olive oil spray. Drain and rinse garbanzo beans and dry them as much as possible with paper towels. Spread garbanzos in a single layer in the pan. Spray generously with olive oil spray, then squeeze lemon wedge over the garbanzos. Sprinkle with garlic salt and pepper. Roast in a 425 degree oven for 20 min or until brown and crispy. Shake the pan occasionally during cooking to ensure that all sides get cooked. Although it's unlikely that you'll have any leftovers, if you do, store them in an airtight container. These would make a great substitute for croutons in a salad!
For a different flavor, omit the lemon and sprinkle garbanzos with hot pepper flakes or cayenne. Don’t like it hot? Sprinkle them with thyme, oregano, salt and onion powder for a savory treat.
