Do you crave things that are both sweet and salty? If so, you’re not alone. Many of us -- myself included -- crave sweet and salty things like kettle corn and spicy candied nuts. So it’s a double bonus when you can cook something that is both healthy and satisfies a craving. That’s what these sweet potato circles do for me. This recipe take sweet potatoes and pairs them with a spray of olive oil and several shakes of seasoned salt. I used a mix called Vermont Country Seasonings which mixes salt and pepper with various other spices including (I believe) nutmeg, which worked splendidly with the sweet potatoes. But any mix will do, including lemon pepper seasoning. Serve these by themselves, or as a side dish with a burger, sandwich or grilled chicken!
Sweet Potato Circles
1 medium sweet potato
olive oil spray
seasoned salt
Scrub sweet potato well, but leave skin on. Trim ends off, and then cut the potato into ½ inch circles. Heat oven (or toaster oven) to 400 degrees. Line a baking sheet with tinfoil sprayed with olive oil spray. Spread the sweet potato circles in one layer over the baking sheet and spray them with olive oil spray. Sprinkle generously with seasoned salt and bake for approximately 20 minutes or until they are tender when speared with a fork. The bottoms will be brown. If you prefer them more crispy, leave them in for an additional 5 - 10 minutes.
